You'll Need:

  • 5 large vine-ripened or medium heirloom tomatoes

  • 16 oz fresh mozzarella, sliced

  • 20 small basil leaves

  • Sea salt and black pepper

  • 2-3 tbsp olive oil

  • 1/4 cup balsamic vinegar

Steps:

  1. Slice tomatoes and mozzarella.

  2. Arrange them on a plate.

  3. Drizzle with olive oil.

  4. Sprinkle with sea salt, pepper, and basil leaves.

  5. Reduce balsamic vinegar by boiling it until it thickens, then let it cool.

  6. Drizzle balsamic reduction over the salad. Serve as is or with toasted baguette slices.

“As a busy working mom, finding time to whip up something fresh and delicious can be a challenge, but my go-to is a classic Caprese salad. It's not just a quick and easy summer salad; it’s a beautiful way to showcase the fresh tomatoes and basil I grow in my garden. I love layering slices of juicy tomatoes and creamy mozzarella, adding a sprinkle of sea salt and pepper, and then finishing it off with a drizzle of olive oil and balsamic reduction. It’s perfect for when I need a quick, healthy dish that I can prepare in minutes.”
