1/3 cup lime juice (fresh)
1/3 cup canola/olive oil
1 tbsp cumin
1/4 cup red onion
15oz can black beans drained & rinsed
15oz bag of frozedn corn thawed
1/2 cup chopped fresh cilantro
15oz. can chopped tomatoes
1 diced jalapeno pepper (optional)
Dashes of salt and pepper
Mix all ingredients together and put in fridge for 20 minutes to marry the flavors.
Good with black bean chips, corn tortilla chips, on eggs or toasted bread.
